| Poor Man's Pudding With Blueberries |
Ingredients
1 egg
1 cup water
1-1/2 cups flour (regular or whole wheat)
1 cup soy milk (or regular skim milk)
1/2 cup butter, room temperature
1 cup maple syrup
1 cup brown sugar
3/4 cup blueberries, frozen
1 teaspoon baking powder
4 Tablespoons sugar
1 Tablespoon vanilla
Cooking Instructions
Preheat oven to 350 degrees. Butter or spray a 2-liter Pyrex bread pan.
To prepare sauce, combine water, maple syrup and brown sugar in a saucepan. Bring to a boil, reduce heat, and let simmer for 10 minutes, until sauce has slightly reduced. Set aside.
To prepare dough, cream butter and sugar in a large bowl. Add egg and vanilla; whisk until smooth. Add flour, baking powder and soy milk, stirring just to combine. Do not over mix. Gently stir in blueberries.
Place mixture into prepared pan. Pour sauce over the dough. Note: It is normal for the liquid to remain on top of the dough prior to baking. Bake for approximately 35 minutes. Serves 8.
